Jerky, anyone make their own?

Anyone make their own Jerky, if so

Any top tips?

We've made biltong before and it was lovely, quite easy to do if I remember rightly.

We used strips of beef marinated for 24 hours in various spices and herbs then hung it in a box with lots of ventilation but flyproof (we used mosquito window mesh) outside on the tool room roof in full sunshine.

I think Im going to have a crack at it this year, I can hang it in my snake room (its 30 deg in there)

when i make biltong i use a little fan heater... marinate the meat for 12 hours.... then hang it on meat hooks ( i use an old clothes horse and  set the heater up...   yummy biltong in less than a week ;D ;D ;D


that reminds me i must make some more very soon ;)

Its ok as long as you wash your hands before picking the snakes up

They have a fantastic sence of smell but very poor eyesight

What sort of jerky are you planning to make then? Do a teriyaki or peppered one, those are nummy  :yum:

well I do like a bit of spice so ill have to make a hot one

Treated myself to a drier and got it "past" the OH by tempting him with homemade jerky.  He is such a soft touch!  Slowly working my way through a little book he bought with purely jerky recipes!  Tried beef and turkey - both yummy.

Hi ya

I got this book as a christmas present and has a good section on Jerky/Billtong etc and how to make your own drying box etc, which is basically a cardboard box with a lightbulb at the bottom, covered with a piece of perforated hardboard so no drips hit bulb in the first day or so.
