Help with Marmalade please

Hello all,I have tried making some Lime marmalade, i follwed the recipe but it was runny, so i added some more preserving sugar and bolied it again, it is a little thicker but not much. I think possibly my old electric cooker rings my not be getting hot enough (just a guess)
1. Can i boil a third time or will it burn
2. What else could I do with what I have at the minute, dont want to waste it!

Depends how much of it you have but I'll bet it would be lovely in the summer poured over vanilla ice cream.   You could freeze it in ice cubes and use it in lemonade.  Don't know if you can reboil a third time - I've certainly done it twice and added certo for good measure.  I'm rubbish at making jam.

Hi
Have you tried adding a little bit of bicarbonate of soda? Reboil it a little and add some bicarb of soda (not a lot!) The reason is, lime is far more acidic than other citrus fruit. Good luck!
