Does anyone know where I can buy a large table protector that is tough enough to protect a table from butchers knifes, scalpels etc

can you be more specific as to purpose? If for minor surgery and food prep then I'd have though a sheet of stainless steel would be the ultimate. For vet consult tables we bought thick rubber type covers.. but they usually came precut at 2foot wide by some 4 or 5 feet long though dubtless a supplier could source differences... somewhere like 'burtons of maidstone' if you rang them.
Other options might include high density camping ground matts (not the old style thin sheet stuff) or flooring vinyl - again that is available is various grades including the stuff used in Bus garages rather than the flimsy domestic bathroom sort.

or finally if you want to be cheap you could consider a sheet of ply screeded in 2 part epoxy and recoat as necessary. (for moderate quantities of epoxy it's sadly cheaper to consider buying from a chinese model shop like hobbyking)
