I saw this on TV a couple of weeks ago

I have made this twice since I saw it. It's very easy and tasty.
4 tbsp oil
2 small onions - chopped
1 tsp turmeric
2 tsp cumin seeds
225g rice basmati  or long grain
Stock cube
1 pint boiling water
1 small courgette
Half can chickpeas
150g frozen peas
350-400g salmon fillets cut into 2cm pieces
Seasoning


Put oven on at 200


Heat oil, add onion, turmeric and cumin. Cook 3-4mins. Add everything else except the salmon. The stock cube can be put in whole (trust me it works)
Seasons, bring to the boil, storing.
Cover pan with tight fitting lid and cook in the oven for 15 mins


Remove lid and stir salmon pieces in.
Recover with lid and also a tea towel over the top. Leave for 10 mins.  Do not put it back in the oven.
It will all be cooked from the remaining heat.

Cheviot, Shetland and Hebridean sheep.
