Inspired by the conjunction of a large batch of woody rhubarb form my sister and having watched the Great British Allotment challenge, I decided to try something myself.
1kg rhubarb chopped
1 kg sugar
Grated rind and juice of 4 largish oranges
80g grated fresh ginger
Put everything in a large pot on a lowish heat until the sugar is all dissolved. Then simmer til the rhubarb completely disintegrates.
Strain using a sieve lined with an old dish towel (I used an old linen one for the lack of lint)
Bottle in screw top glass bottles. This gave about 750ml. Don't know how long it will last as it's being drunk so quickly! I like it best with fizzy water but it's good just with tap water too.
