This varies so much from region to region, too.
we would call a females:
birth to Christmas - ewe lambs
Christmas to shearing - ewe hoggs
Shearing, through tupping time, to having their first lamb - gimmers
and thereafter, one crop, two crop etc., according to how many pregnancies they have had
with 'draft age' referring to older sheep who would not be considered suitable for the hill, but would come down to lower ground for another season or two (or possibly more, I found a lady of unidentifiable age whilst sorting sheep today, I believe she may be seven crop, and we have kept her as she was in really good shape)
and males:
birth to Christmas - tup lambs (or wethers if castrated)
Christmas to shearing - tup hoggs
after shearing - shearling
and thereafter two shear, three shear etc. according to how many times they have been clipped,
but I do know a lot of people who use 'gimmer' as a general term for female, so would say gimmer lamb, gimmer shearling and so on. And in some areas, adult teeth are referred to - two tooth, four tooth, full mouth.
