Since the shortbread recipe I have been inspired to try cakes & buns, but being new to baking have no idea where to start.... Has anyone got any tasty but simple recipes for fairy cakes / buns to get me started? 
 With the easter hols coming up it would be nice if the kids could make some too.
Sheep: North Ronaldsay & 4 Horned Hebridean - We also breed & exhibit 3 breeds of rabbit - Chinchilla, Deilenaar (rare breed) & Colour Pointed English Angora.

plain buns


4oz self raising flour
4oz caster sugar
4oz butter
2 eggs
vanilla essence


cream butter and sugar together, add eggs and a couple of drops of vanilla essence mix, add flour mix gently.


spoon mix into approx 1 doz cupcake cases ideally in a bun tray.


bake at 180C for approx 15 mins till golden


in theory allow to cool before eating but otherwise stuff in face asap




variations add choc chips or raisians to the mix at the end before adding to cases


or replace 1 oz of flour with 1 oz of cocoa powder for a chocolate version, ( i find these a bit drier so add a blob of butter cream on top)
