spring lamb on the menu

jimmys farm were advertising spring lamb dinner nights for early april.
so i was wondering just how old they were and when are these lambs born? december time maybe?

Technically, they are still lambs if they were born late april or may last year.

Lambs born last year wouldn't be classed as Spring lamb - they would be old season lamb.

Spring lamb will be December born I should think.

Or Mid-January born and then fed on ad-lib cake.

Of old Spring lamb means they are not yet weaned. If they are weaned they are new season lamb.
