Tomato Soup with Poached Egg

Ingredients: 3 x large potatoes (cut in cubes), 1 onion (chopped), 1/4 teaspoon of paprika, 2 x chicken stock cubes, 4 x tins of plum or chopped tomatoes, 1 x tablespoon tomato puree.

Directions
Heat onions in large cooking pot with small amount of olive oil.
Add the tin tomatoes and the potatoes.
Crumble the chicken stock cubes on top and and salt and pepper to taste
Add 6 x mugs of boiling water and mix together and cook/simmer for 35 mins.
Just before you blend the above with a hand blender add a 1/2 teaspoon of white sugar to the mixture.  Blend all together using either hand blender or similar.
Simmer the soup whilst you poach 1 or 2 eggs in a separate pan on the cooker - add a dash of vinegar to the boiling water before adding the egg for poaching to the water.
Add soup to bowl and take poached egg from the boiling water -(poached to own taste - soft or hard) place on the top of the soup in the bowl.  Serve with crusty bread.  Delicious!
