baked jamaican pineapple (not for kids)

you will need;

1 pineapple (not tinned)
mixed berrys
malibu
tin foil

top and tail your pineapple and then cut it lengthways into 8 wedges
put the wedge onto your chopping board and cut off the core
carefully run your knife (facing away from you) between the hard skin and the flesh,
do not throw away the skin. now chop the wedge shaped pineapple into about 6 pieces
and place it back onto the skin
place the entire wedge onto a large square of tin foil
and pour a liberal amount of malibu onto the pineapple
then place a 2 large tablespoons of mixed berrys onto wedge
wrap in tinfoil and refridgerate overnight
to allow malibu to marinate the pineapple

the next day; put in oven for 15mins 200degrees
makes a simple and yummy desert

let me know what you think of it! its a fave of mine, i learnt the recipe at a hotel in rutland where i did some of my training as a commis chef!
