storing rhubarb

was over in Ireland at the weekend and brought back a load of Rhubarb from Mrs SBs folk splace  :)

what's the best way to store it?

was gonna chuck some in the freezer for longer term storage, but plan to use some over teh next week or 2 - can it just go in the fridge or best in a cool dark cupboard or where?

I'd just freeze it all. It doesn't really keep otherwise - goes all limp.

I decided to make bulk Rhubarb and Custard ice cream and store it like that!  Yum - I am going to be fat as a fat thing.

cook with some sugar and freeze. I tried freezing it just stripped and cut up, but found that it doesn't last long raw (turned into freeze dried, lol). Must say that I am someone who keeps fruit in the freezer occasionally for years to make chutney and jams later though. It's probably fine for a few months. :&>

Rhubard and custard ice cream - I just made rich vanilla ice cream (375ml milk, 90g sugar 5 egg yolks, 185g double cream 1 vanilla pod) then, when it has been churned or frozen to soft stage - "marble" in 225g of prepared rhubard cooked in a little water and sugar and liquidised.  That way you taste both flavours separately - yum.

Ha ha!  Home made ice cream is really custard mixed with cream, but I guess you could always make it with Birds custard and cream together.  Yum - I might try that - it would be a lot easier.   ;D

Confectioners custard, made with egg yolks - makes homemade icecream.

If you can get hold of some wild mint, it makes a fantastic rhubarb & mint jam!
Went down well with every guest I ever had.

In the past I have cut rhubarb into cubes, place in a freezer bag and covered with sugar, kept in the freezer fine. I plan to make loads of jam this year with mine.

I bought lots of cherries today (49 p for 250g at ALDI!!!!), so I'll make compote with rhubarb which I then can either freeze or add more to make jam. First time for cherries and rhubarb, I probably tried everything else with rhubarb so far! :&>

then add your stewed rhubarb, when it's cold, then partially freeze, then whip it until creamy then re-freeze.............homemade ice-cream!
