We have had American friends over a couple of times for Thanksgiving, their speciality was Sweet Potatoes and Marshmallows baked!!
My kids were so bemused.

There's a recipe for curried sweet potato soup on the website. It's delicious.

Believe it or not they're pretty good fried as chips.

they make nice soup with carrots or squash but we mainly just put them in the microwave!
you have to moisten them first, then put on full for 10 minutes, depending on size they might be soft and done or repeat the process. also, you can cook and mash them like normal tatties, real nice. :&>

I'm diabetic, and eat them in place of potatoes, they're lower GI and just taste better :)

boil sweet potatoes til soft, add stock powder (marigold is my fav) and whole garlic cloves to taste, wel ove garlic so use bulbs!
Then whizz up with blender.
