Silence of the lambs

i can pick up a few lambs at a great price. was thinking of turning them into a few family packs for family and friends what are the best cuts to ask for to make the most out of them. cheers

We sell our lambs to family and the public on a small scale - when we get our lambs butchered this is what we like to get back:

lamb steaks (v.popular)
lamb chops (and neck chops)
boned and rolled shoulder joints
legs of lamb
mince
kidneys -
liver - some folk like these...not me!

cheers jude for the help can i just ask you how many chops, steaks do u usually get from a lamb (40kg live weight) also with the mince do u get this as by product or do u ask for it and how many kg of it do u get.

What a pity you aren't closer, I'm wanting some lamb to put in the freezer. The list above is more or less what I'd want.

hey jude

after looking into it a little more i think im going to go for

Legs - cut into steaks
Chump - cut into chops
Loin - cut into chops
Best end of neck - cut into cutlets and maybe a rack
Shoulders - either 2 boned and rolled shoulders or 1 shoulder 1 knuckle and 1 blade
Breast - boned and rolled
Neck - neck fillet + scrag end
liver and kidneys
Trimmings - minced
Bones - for the dog or soup

what do u think. i know a lot of cuts but i think i will find it easier to shift so my mates wont be intimidated by big chunks of meat.

Sorry for the delay, I forgot to check if you replied!

Your list sounds great, and yes, not intimidating for friends and family - we find no-one seems to want to buy a 'half a lamb' - they want to be offered the same things they see in a supermarket - legs, chops etc, in fact I would say of all the cuts, the legs (either as leg steaks or whole) and chops are the most popular. We do ask for mince as people like that too for shepherds pie - but if we don't ask for it specifically they don't give us any..

If you let me know your email address I'll send you our price list if you might find it useful so you can see how much we charge everyone (including family, though sometimes we throw in a few freebies eg. the liver and kidneys!). We are near Ingleton, North Yorkshire and we looked at what the local butchers were selling their meat for.

(Doganjo - We are also looking to sell frozen meat packs by post if you're interested in trying it!)

Hi, yes, I'd be interested.  Give me an idea of prices and when you could start sending out the frozen packs.

yes found that also people dont really want half lambs. im selling mine down south (ireland) where i checked some prices

leg 30euro a kg
lion chop 19euro kg
chump chop 11euro kg

lamb prices are quite expensive at the min. £90 for 20kg dead weight.
