Banana cake recipe please

I can't find my recipe for banana cake, and have 12 kg of bananas for us & the animals for a fiver!

There are some that are just ready for cake-ing, so please help a.s.a.p!

ICED BANANA LOAF


METRIC                      IMPERIAL
200g self raising flour            8oz self raising flour
½ tsp salt                       1/2tsp salt
¼ tsp mixed spice            ¼ tsp mixed spice
100g butter or marge            4oz butter or marge
400g ripe bananas            1lb ripe bananas
150g caster sugar            6oz caster sugar
100g sultanas               4oz sultanas
50g walnuts               2oz walnuts
2 standard eggs beaten         2 large eggs
 
ICING  (optional)                      ICING
100g icing sugar            4oz icing sugar sieved
1 x 15ml spoon water            1 tablespoon water
A few walnut halves            A few walnut halves
Quartered slices of orange         Quartered slices of orange

cooking time : approximately I hour (check after 45 mins)
oven : 180 c, 350 F, gas mark 4

Grease and flour a 600g (1 ½ lb loaf tin). Sieve the flour, salt and spice into a bowl. Rub in the butter or marg until the mixture looks like breadcrumbs. Peel and mash the bananas and add to the flour with the remaining ingredients. Beat the mixture until it is well blended. Turn into the prepared tin and bake in the oven until well risen and golden. Leave in the tin for 5 mins then cool on a wire rack.

(optional) When the loaf is cold, blend the icing sugar and water to give a thick, flowing icing. Spoon over the top of the loaf and decorate with walnut halves and quartered orange slices.

My favourite receipe (and it's well tested  ;)) is this one for banana bread - apparently it freezes well too, but there's never been any left to test that theory  ::) :thumbsup:

250g of plain flour
1 teaspoon of baking soda
A quarter teaspoon of salt
65g of butter
110g of brown sugar
2 eggs, beaten
525g of overripe banana's, mashed

Preheat oven to 350F/175C, lightly grease a 9x5 loaf tin.
In a large bowl combine the flour, baking soda and salt.
In a seperate bowl cream together the butter & sugar, stir in the eggs and mashed banana's and mix til well blended.
Stir the banana mixture into the flour mixture, stir just to mix and no more (if it gets over mixed it's not as light & fluffy)
Pour the mix into the loaf tin and bake for 60-65 minutes, until a cocktail stick or wooden skewer inserted into the centre comes out clean. Let bread cool in the pan for 10 minutes, then turn out onto a wire rack.

That's what the receipe says, but try hanging on 10 minutes once you've smelt it  :yum:
It's great on it's own or with butter  :thumbsup:

I've mixed in chopped walnuts too, just for something a bit different and if you want to make it extra sweet & crunchy you can sprinkle the top with demererra sugar before baking  :yum: :yum: :yum:

Oh god ! Wish I had some brown banana's now  :-\

I just use a victoria sandwich basic mix and add mashed bananas - 2 or 3 for one cake.  I don;'t add walnuts, although I know this is traditional, because OH doesn't like them.

its lovely .... tastes Just like the recipe I've misplaced, so its a hit here!
And travels well for pack-up lunches (or even breakfasts!) at work.
