My favourite receipe (and it's well tested
) is this one for banana bread - apparently it freezes well too, but there's never been any left to test that theory
250g of plain flour
1 teaspoon of baking soda
A quarter teaspoon of salt
65g of butter
110g of brown sugar
2 eggs, beaten
525g of overripe banana's, mashed
Preheat oven to 350F/175C, lightly grease a 9x5 loaf tin.
In a large bowl combine the flour, baking soda and salt.
In a seperate bowl cream together the butter & sugar, stir in the eggs and mashed banana's and mix til well blended.
Stir the banana mixture into the flour mixture, stir just to mix and no more (if it gets over mixed it's not as light & fluffy)
Pour the mix into the loaf tin and bake for 60-65 minutes, until a cocktail stick or wooden skewer inserted into the centre comes out clean. Let bread cool in the pan for 10 minutes, then turn out onto a wire rack.
That's what the receipe says, but try hanging on 10 minutes once you've smelt it
It's great on it's own or with butter
I've mixed in chopped walnuts too, just for something a bit different and if you want to make it extra sweet & crunchy you can sprinkle the top with demererra sugar before baking
