What to do with russet apples

We have several apple trees including one which produces russet apples. Unfortunately the russets tend to go to waste as we tend to prefer the various other varieties that we have. Being as I don't like things going to waste I was wondering if you can use them for cooking/freezing? Any suggestions anyone?

They make wonderful apple cake.  Is it the texture of the skin you don't like?  If you peel them, they are really tasty.

Personally love a good nutty russet...try them in salads with walnuts.

I only like a good, ripe russet. I have a recipe for Christmas jam using russets and will look it out later today. It's a bit like mincemeat but lighter.

The juice is really nice if you have a juicer? We usually mix them up with some cookers for a great balance of flavours!
