Planning the smallholding

We have 30 acres which has a carrying capacity of 4-5 Dry Sheep Equivalent http://en.wikipedia.org/wiki/Dry_Sheep_Equivalent per acre.
I would like to eventually have 2-3 small cows (freezer size  :yum:) and 2-3 fattening weaners.
Could you recommend books/websites to help me plan the fencing requirements for this? Ideally I'd like to fence only an internal perimeter fence of 12 acres or so (is that enough considering the DSE?) and then use electric fencing to establish strip/cell grazing.
I have a problem in that I have only one Dam right down the bottom of the place, so I'll have to either a) get another dam or b) pump water from dam/water tank
I'm in an area in Australia which doesn't need to house our animals over winter and the place has no bare patches (other than those we've made ourselves ie driveway!)
