Red Bay Farm Blackeyed Peas

Made this for New Years...eating black eyed peas is a tradition here in the states.  Happy New Year to Y'all even if somewhat belatedly.

Ingredients

1 pound of black eyed peas
1 red bell pepper
8 ounces tomato sauce
2 ham hocks
1 Large handful of mustard greens and collard greens (kale would be a good substitute)
1 green onion
1 medium red onion
1/2 red cayenne pepper with seeds removed
2 cups sweet venison stock
2 cups beef stock
1 red bay leaf
1 clove garlic
2 sprigs fresh thyme
1 tablespoon of fresh oregano
1 slice bacon

Instructions

Place ham hocks in pressure cooker.  Cook 45 minutes under
high pressure.  Remove and separate meat from the bones. 
Chop meat.

Cut bacon into small pieces, chop red onion, mince garlic
clove.  Fry bacon until it begins to brown.  Add onion and garlic
and sautee until soft. 

Chop greens and add to pot to stir fry.

Add stock, black eyed peas chopped ham hock meat and
remaining ingredients to pot.

Cook twenty minutes under high pressure.

Serve with corn bread.
