hard to describe the taste, its v rich but not 2 gamey. really healthy as its so lean but does require long cooking and a good shot! the damage they do to the trees here is awful, let alone eating all my hazelnuts. i try 2 source all my meat ethically and squirrels about as ethical as it gets. id reccomend it to amyone concerned about how their meat is sourced.

perfect with loads of fresh thyme and particularly good with a slug of red wine for added measure!

Sounds ideal, free (well almost free minus gun and shot) Funny how I posted a photo af the Deer my son in law shot, people on my Facebook went mad, well not all, yet if I'd had put a picture of a burger or sausage etc nothing would have been said. Love the idea of keeping the Grey Squirrals no. down and having a day out shooting then getting a nice meal out of it.  Buy the way, I regularly go around Devilla Forest FIfe and have so far seen 4 Red Squirrals!!! you have to  be lucky to see them as they are both quick and shy, others have seen them there too!!!!

how many would you need to catch/cook for a large family meal? just assuming there isn't much on one squirrel.

Sandy, I posted on FB about what I wanted to do to the fox that took my children's favourite hen and 99% of friends were in agreement but it was hubby's niece that went ballistic at me! caused quite a rift for a few hours  ;D

the meat is very dense and rich so i find one squirrel is fine for 2 people, 2 1/2 hrs stewing minimum tho or it can be quite chewy! i liketo put loads of chestnuts in mine!
