selling meat

i have put this in the sheep section but i thought id try here to see if i got any more replys.

please can someone give me info or point me in the direction to find out :- what rule/regs/laws i need to follow for selling meat in halfs etc?
if you cut it up are there even more regs to follow??
can you really get away with selling to friends and family without having follow any regs???

This is a really complex area - so much so that I have thought about a book on it, but rejected on the grounds that it would be so dry and boring!!

If I get a chance I will post some basics tomorrow or Sunday on this.

It is covered in Pig Keeping published by the National Trust - check it out on Amazon.
