My last 4 mutton carcasses (wethers) were hung for 14 days, which was more than I thought they would get, but they taste AMAZING! 

This was using a local butcher rather than the abattoirs own cutting room.  If I had used their own cutting room I suspect the hanging time would have been non existent.
