My favs french onion ,when made I place it in a casserole dish and put dumplings in. Soups I just make up to what is at hand and always liquidise as I dont like lumpy soup!

Found this great recipe for butternut squash soup (or pumpkin).

Cut your veg, cover with water and a stock cube.  Cook until soft.  Drain a little of the liquid away and keep just in case it's too thick.  Blend until smooth.  Add some coconut milk and red thai curry paste and blend again. It's so delicious.  The quantity of paste and coconut milk is up to you.  Add a little at a time to start with until you get the flavour you like.

Whats all this blending are you old and have no teeth  ;D   I like good sturdy soup with bits in it.  :wave: :yum:

For my butternut squash soup I just use onion/leek, the squash some lentils and a good dollop of cream cheese.  Oh and plenty of seasoning and two good tsps paprika - fantastic!!

I have just (quite literally) finished up a bowl of soup from this months Home Farmer Mag, it was the potato and blue cheese soup as we had some Stilton left from Christmas, it was delicious, but then I do like Stilton, the girls took one smell and declined!

I used

2 potatos
1 onion
2 cloves garlic
A knob of butter
A drizzle of cream that I had left over
The remains of the stilton
A veg stock cube and about a litre of water
Chop onion & garlic, soften in the melted butter, add chopped potato, veg stock and water, cook until potato is soft, either use a masher to break down potato or blend at this point, add the cream, then add the cheese until melted.

Eat heartily with a good chunk of bread and enjoy!!

The secret of a good soup is proper home made chicken stock.

Make it, and if necessary freeze it in 1L plastic milk bottles so you have it to hand when you need it, and you won't go far wrong.
