anyone help identify what these are growing in the paddocks?

Chicory (blue flowers) - no harm and very pretty.  I would think it will be tasty for livestock.

Prostrate or some type of knotweed (pink bobbly flowers) Polygonum avicularae.  Common weed of cultivation - no harm.  No relation to Japanese knotweed.
