I have been told by my butcher that you should always allow your sausages to dry before freezing. Overnight hanging in the fridge is best. They will often lose a surprising amount of water.

I have made notes from all your messages and will be going on Weschenfelders site to get some bits.

I am determined to get there       and i can definitely see some areas where I have obviously gone wrong!!
