Inspiration please!

Hi all, don't think I have been in this part of the forum before!


I am not sure if I mentioned it before but up til May when my friend slaughtered a Dexter I had helped look after I had been veggie for years. Having looked after it i had no qualms eating it  :yum: :yum:
However I am not yet familiar with cooking meat beyond a roasted cockerel or a sausage!


Today the same friend has given me....


2 x 2lb bags of dexter mince
A bag of lamb chops
A 2lb bag of stewing steak
A slab of belly pork
A bag of chicken portion bits.


How do I cook the above please?
Recipe suggestions would be fab. This meat is wonderful and deserves to be cooked well, I looked after each beast except the pigger and feel I must do something special in view of this :thinking: :thinking: :thinking:
The only thing I had thought of so far was burgers but that is a bit dull IMO

CW, where do we start?
Mince you can do sooo much with. Cottage pie, mince and tatties, bolognaise, mousaka, chilli (my fav) and the list goes on.
Lamb is dear so you might just want to cook them without altering them too much. A nice fried lamb chop with new potatoes.
Stewing steak, well again an endless list. Stew, a meat pudding, chilli (again) etc
Belly of pork, it just has to be slow roast belly. The meat will just fall apart. Scrummy
Chicken, again an endless list. Curry works well with chicken.
Oooo have to go I think my chicken is burning.  Will think of some more for later

Yup if I had space for cookbooks I would have loads. But that would mean giving up space for my Pratchett collect :o :o :o

Mmmmmmm stew and dumplings :yum: :yum:  I reckon I could manage that! Do I need to do anything to the meat 1st or can I put it straight in??

I was in exactly the same boat as you not so long ago. I have loved learning about all the different things I can cook with the various cuts of meat. I had never cooked any type of meat before so it has been a steep learning curve. I have actually found my diet has become much more varied since turning away from vegetarianism. I was quite good at vegetarian cooking, but now there are so many more options! You'd be best to start off simple, it all tastes good on it's own and doesn't need a thousand ingredients to go alongside it. For mince I would suggest the classics - lasagne, spag bol, cottage pie. Guaranteed to taste good. Lamb chops should be grilled with no added flavourings whatsoever. Mashed potato, green veg and mint sauce. They taste so good, they don't need anything else. Stewing steak absolutely must be made into a steak and mushroom pie. Possibly my favourite meat dish I have made so far. Served with chunky chips and peas. Soooo good. I have also made a beef and ale casserole which was superb. Belly pork I am not so keen on. I guess slow roasted, possibly marinated in a barbecue sauce. Chicken bits - sprinkle generously with paprika, cover with tin foil and roast in the oven. Or coq au vin or any other kind of casserole. I like to keep things simple with as few ingredients as possible. Most of the recipes I have used have come off the internet - happy to post links if you would like.

rmember to seal the meat first, by frying in a little oil then slow cook in stock for an hour or two. cant go far wrong.

Good food don't make you fat its too much crap food!!   :wave:   Enjoy and I wish I had your problem with all that meat!!!  I sometimes look at internet video's for inspiration, the BBC have a good site...I often have to cook vegetarian meals as I lack a great deal of inspiration in regards to non meat or fish dishes......I also love come dine with me.....mind you I mostly forget the nice stuff I see on there !! :wave:

Get your meat out of the fridge for a while before cooking. Toss your stewing steak about in seasoned flour before browning it in good shimmering hot oil. It will give your sauce some consistency in cooking. Just good old plain flour, freshly ground black pepper and salt. A teaspoon of Dijon will add a depth of flavour to your stew too. Tell us how it tasted!
