My usual suggest to wannabes is to look up the WWOOF hosts in your area - there are many very good ones in Essex, I know - and get your hands dirty, make some good contacts, learn loads and have a lot of fun 

It isn't for everyone, but be warned - I WWOOFed and it changed my life!
