When we started to get enough milk to make a bit of cheese etc , we called in the lady from trading standards to make sure we were ok to go public. '' you can't have unsealed wood on the milking stand , all surfaces must be washable. you must have a water supply in the dairy with a seperate hot water hand washing basin, you must have a change of clothes for milking. all the dairy surfaces must be washable , you cant use a domestic cooking thermometer for pasturising the milk , all measuring devices must be callibrated, you can't add herbs to the cheese because the people that picked them might have gone to the toilet in the field where they were picking and not washed their hands ( I wondered at this point if she drank tea ? ) '', etc, etc.
So sod the public , they can do without our cheese , too many expensive hoops to jump through.....
So next time you make a cuppa think about who picked the leaves.!.....how the bloody hell have we lived this long.
