Hi there - ready to embark on my next emotional rollercoaster that is dispatching of the christmas turkeys and want to read up on it to make sure we are as prepared as we can be. Can anyone advise where to go for advice or those of you that are experienced help me out?

I've bought a dispatcher that you attach to the wall.

Whats the best (i.e. calm and quick) way of getting the turkey into the dispatcher - 2 man job? / render bird unconscious?
How long can the birds hang for and do they hang whole? I've been told about removing leg tendons? Is this before or after the hanging? Is there anything else I should know?
