I record the following things per animal (in no particular order):

- all sheep with full EID
- sire and dam
- date of birth
- number of lambs born each year
- fleece quality
- foot problems, what and when
- head fly problems
- fly strike
- any other health issue
- day old weight
- adjusted 60 day weight  (as an indicator of maternal ability of dam)
- adjusted 150 day weight  (as an indicator of growth rate of this lamb)
- slaughter weight
- birth presentation problems (if assistance required and why, leg back etc)
- description of mothering ability (does it follow the lamb if you lift it etc)
- description of sire abilities - keenness etc
- tupping date (also number of days after rams goes in, do they return etc)
- gestation length
- general demeanour - flighty, friendly etc
- description of looks, clean head, correct ears etc against pedigree standards - this helps to select stock to retain

*adjusted weight is based on sex, litter size and age of dam.  I use the chart on this page: http://www.sheep101.info/201/adjweanwts.html.
