Lung extractor
« on: December 07, 2013, 09:55:15 am »
Does anybody know where I can get a lung extractor? or is it necessary? What do other people do to remove the lungs from a chicken carcass?

Grateful for any advice. We are about to do our first chickens next week.

I'm not very experienced, having only done 3 in total but in all 3 I just scooped the lungs out by hand. They are well attached so I followed the curve of the carcass tightly then sort of eased them out with my fingertips. They feel more spongy than the meat so quite easy to distinguish by touch.

I only did my first ones this week and the carcasses were a bit small for my hands but i got most of it by hand... if i had wanted them whole id have tried harder but as they were quartered for casserole they were easy to finish off in the kitchen later!!!

we do all birds by hand, even tiny quails. very easy, just slide your fingers around the cavity to loosen them. intestines etc should all come out in one piece   - from anus to throat.

Usually I find  the lungs don't come out with the rest of the innards and I have to take them out with a push of the finger along either side of the back. Don't think it matters if you just leave them in. They are a different texture and colour so easy to see in good light Suziequeue.

I have builders sized hands, yes complete with callouses, and I just scrape out the lungs with my fingertips and nails.
Just remember to wash your hands before eating, picking teeth, nose etc  :'(
