Best recipes for old layers

As per the cockerels thread, we have several old hens who haven't laid this year, so I don't intend keeping them through the winter. There won't be much meat on them though, and I expect what there is to be tough as old boots.

Does anybody have some good recipes that will help ease my conscience?

The same can be done with old hens, though anything over 2 years old should just be used to make a good stock, as no matter how you treat it a free-ranger of that age will have your teeth bouncing back everytime you take a bite   :roflanim:
