anyone tried roasted trotters....i  thought trotters were dog feed... do they BBQ well

They are supposed to be the 'latest' thing on London restaurant menus.


Personally I make brawn with them, or if the dogs have been good they get them  :)

I made HFW's Chinese-style pig's trotters - okay for me but the kids did a yuk! I use them for the jelly in pork pie too. There is a French sausage using the trotter for a skin - haven't tried that yet.

the butcher where i saw them said roast them and they crackle up nicely

Might try that then - loads in the freezer - I have roasted the hocks.

Yes, the hocks are beautiful slow roasted  :)

Excellent in any soup or stock to thicken it up - rich in gelatine, or you can make zampone, or pig's trotter Pierre Kaufmann. A very versatile part of the pig.

The restaurant we supply to bones them out and stuffs them with a mix of various things and they are delicious when roasted, all crispy and moorish.

my mum has alwaysloved trotters.... :P  yuk from me i'm afraid...... a bit squeemish-we still have the ears in the freezer waiting for me do do a nigela with them!!! :D :D

Ooo I love a trotter to make a stew or soup more.... rich?


Found the HFW recipe disappointing actually, didn't taste of much to me.


Collagen/gelatine extremely good for you too  :thumbsup:
