time to say goodbye.....

well the day has come.......

saturday we will be culling 2or more table birds.............
last time we started this process we only managed 3 and then the fox got the others :o
(not sure if someone gave them the heads up they wouldn't be there for long!!!

we starve from food the night before and we've got a dispatcher (a tripod with upside down funnel ) it has an arm theat goes round the neck and a sharp pull kills them. the funnel thing supports them. then cut the neck to bleed and then pluck.

hang one for a few days, it really improves the flavour.

We left some of ours for a few days and they gassed up and tainted the meat. They were starved as you do Manian, but I think they may have had gut worms which started to decompose when the body temperature dropped. They ended up in the dustbin.

i think you must have been very unlucky there chris, ive hung loads of birds with no problems.
