what to do with a tonof flat leaf parsley

i have just had my daughter pull this all out and there is a HUGE quantity -what can i do with it as i hate waste!  too much to freeze as we'll only use a wee bit during the winter months in soup

Parsley pesto?

2 cups parsley,
2 cloves garlic,
salt and pepper,
1/4 cup pine nuts,
1/2 cup parmesan,
2/3 cup olive oil - or enough to blend it together until it looks like pesto!  :D

Just blend everything together (except the oil), then add the oil a little bit at a time. That's all I can think of!

you lot are brilliant!

so i have just started making wine (a pound of parsley so that helped a lot); after that i'll make some parsley pesto and then freeze some - best way to freeze please?

and can i hang some up to dry or is it not mice like that?

I've never frozen pesto before but had a quick google and found this

I'm pretty hopeless with this stuff so don't know if I've put the link in properly but hopefully it will work  ???

Never tried to dry parsley but I'm sure I've got a jar of dried parsley hanging around in the larder somewhere so I guess its possible...

oh i like the sound of parsley and potato soup - think i'll try that one too.

well it was a busy busy night here in the Shire and with a very sore back not so easy...yes i know, WHY did i get her to pull it all up when i knew my back was sore????  d'uh!!

anyway, i now have wine started, parsley pesto in jars, parsley oil currently dripping into a bottle (!!) and about 6 bags of the stuff in the freezer...oh and my daughters friend is away with a bag of it for her rabbit......not bad for something i thought i would have to chuck on the compost!

Dry it, parsley is one of the few herbs you can dry in a very low oven. You need to watch it as it dries quickly and then just crumble and put into jars. I make enough to last all year!

I grabbed a few handfuls of flat leaf parsley yesterday, to stop the chives getting overgrown with it, I thought, "I'll give it to the chickens they'll like that..."
well, apparently my chickens don't class parsley as food - even the youngsters who will eat anything that the older hens turn their nose up at! I guess it is quite strongly flavoured :( but then so is poultry spice and garlic powder but they seem to like those :)

back still pretty bad nicky, though have managed to get out of bed the last couple of days at least - well for part of the day anyway.  wandered round the garden yesterday and just wanted to cry when i saw all the wasted veg and weeds - neither of which johns seems to notice............

found a TENS machine yesterday and started using that and def think it is helping - though not sure if you can 'overdo' it...time will tell.

going to try and pick sme stuff today..........listen for the screams!

how are things your end?

if you not great by weekend give me a shout and will come and harvest for you..
not enough hours here as weeds are coming up as soon as i turn my back.
the fact that its pissing down again is not to impressive.
need to try find a dry job......
