We always make mincemeat before Christmas, when we're making puddings and cakes, and usually enough that we're eating it all year round!

While it's good in apple crumble, we needed to expand our repertoire. These delicious soft cookies made with mincemeat and oats are the perfect treat with tea, coffee or hot chocolate, and so easy to make.

If you fancy making some home made sweet treats for Christmas (or anytime), these snowballs are delicious and so easy.

I made these one day; next day made the same but with dark chocolate instead of white. Planning more variations with additions of alcohol, soaked fruit etc. I thought rum and raisin might be nice - or Cointreau and maybe an orange flavoured chocolate. Who knows? :-)

Banana pancakes with crispy bacon and maple syrup

I was looking through a pile of food magazines that had accumulated on the cookery bookshelf over several months - you know the kind that are full of recipes that look lovely but you know you are NEVER going to make - and extracting those recipes that I might possibly try.

Found this one and since I like making (Scotch) pancakes (or drop scones) anyway, I thought I'd do this for brunch today. It was yummy, even with (or maybe especially with) Golden Syrup rather than maple.

Dan's Oven-baked Omelette

We bought 20 pol hens a couple of weeks ago; they are laying like mad but the eggs are too small to sell to the public so we have a bit of a glut.

Spanish Omelette is always popular with us in times of egg glut, but our frying pan isn't big enough to make one that feeds all five of us.

This oven-baked alternative is delicious and eay to make - and it was big enough to feed us all.

This could be made with almost anything you might use in a pan-fried omelette - peppers, peas or maybe smoked fish would all be tasty additions or alternatives.

Bloody Mary Tomato Relish

A friend of ours buys magazines regularly and drops them in to us when she's finished with them. I always like to scour them for recipes to try. The description of this one said "Great on bacon butties or to add to tomato pasta sauces". Now pasta and bacon butties are very popular here, so I thought I'd give it a go. I also had a couple of peppers and some celery lurking in the fridge, so it used them up too.

It would be a good recipe for tomato glut time, although I used horrible supermarket tomatoes (pale and tasteless) and it improved them enormously.

Mini Cranberry and orange panettone

Delicious and easily made, these mini-panettone are great as a tasty treat with tea and coffee, or as gifts.

You can make these in panettone cases or you can do as I did and make them in empty 400g baked bean tins, washed with the labels removed. Actually, there was a range of products but you get the idea about the size of the tin. You need eight tins for this recipe.

You can make the dough by hand but I used the Kenwood with the dough hook and it was really easy.
