Best beetroot for winter planting in polytunnel

Right - following research and suggestions on this forum I am going to do:
Pak choi (with anti-slug measures!!)
Beetroot
Lettuce
Spinach
Salad onions

Does anybody have any suggestions about type? as I notice Tuckers sells 15 different types of beetroot!!!

Baby beets as they are so sweet when just steamed
