Just a thought, going back to your original question, I am quite new to keeping sheep so I had someone help show me how to condition score my sheep. It takes a bit of practise but you say your sheep are quite tame. You need to feel their spine over the loin area, it should feel like your upper thumb joint when bent ie smooth, not sharp (too thin) or hard to feel without pressure (too fat). Look it up in a sheepy book for the finer details.
My sheep love having their condition scored, they think I am giving them a little massage!
