Sorry Rosie I missed this and all yours have gone bad or everyone is sick of eating them Lol So try this
16 Clem's or Cleo's- 1/2Tsp bicarbonate of soda - 12 allspice berries - 3" cinnamon stick - 1/2" fresh ginger root sliced - 1/2pint white wine vinegar - 1lb light brown sugar.
Wash and dry then prick a few times with a fork the fruits.Place in a thick base pan and cover with water and the bicarb bring to the boil and boil 10 - 12 minutes Place the spices in a square of muslin and tie up add to the pan along with the vinegar.Continue to boil with the lid on for another 20 minutes.Remove the lid and the spice bag.Turn the heat to low and add the sugar stir until dissolved then turn the heat back up to a nice simmer and put the lid back on.Now lift your fruits out with a slotted spoon and place into sterile jars.Continue to simmer the cooking liquid another 10 -15 minutes with the lid off.Turn off the heat and allow the liquid to cool slightly then pour over the fruits to cover and seal.Store in a dark place. These make a nice present look nice and will keep several months.Try some they go real good with cold roast ham.Beware of the pips if there are any George
Don't do today what can be put off until tomorrow because today will be yesterday tomorrow
