Under ripe sweetcorn

My sweetcorn plants were very late due to voles eating all the seeds (more than once!) and we have only had one feed of proper cobs. I now have lots of small under ripe cobs , not sure if they have pollinated properly. they are bigger but a bit like chinese baby corn. Any ideas what i can do with them? Do you think chunks in picalilli would work
