Over run with cucumbers!!!

Help Please!!

I have now got 7 cucumbers that I had to pick and they are all over 15 inches long!!!   

I need some ideas other than salad before they start going soft!!!

Can you pickle normal cues like gherkins - can you do a sweeter pickle or relish that can be stored for  the year??

thank you for any suggestions ( now Im off to pickle my chillies and dry my tomatoes)

Or sell to friends and workmates - they taste so much better than shop ones

I tried giving some of our extras to workmates Simon, but it sort of back fired - it turns out none of them were used to mis-shapen vegetables!
 
One lassie looked very embarrassed and then asked where you put the batteries!  :innocent:

Oh, and I brought in some extra courgettes the other day:

if its ever a problem again i will always collect, home grown cucumbers actually have some flavour...


as for pickling they tend to go soft if stored too long but if sliced and layered with some slivers of red onion and covered in white wine vinegar they are yummy for a month or more, (they never last that long here)

You can also stuff them and cook like marrow.

I remember years ago my aunt cutting them into rings and stuffing those with cottage cheese and then putting them in the freezer. At the time I didn't like either cu or cottage cheese so it wasn't a hit with me but make worth trying.
