Banana Cranberry and Apricot Loaf

I made this yesterday and its awfly yummy, especially when you hit a cranberry it ads a lovely sour-ish edge to the loaf  

Ingredients:

75g Dried Apricots
75g Dried Cramberries
Zest of 1 Lemon
100g Soft unsalted butter
125g caster sugar
2 large eggs
3 large ripe bananas
200g self raising flour

Preheat oven to 160 degrees C / Gas Mark 3 - bake for 55 mins (I give it an extra 10 mins or until a skewer comes out clean)

Method:

Chop up the Apricots so the pieces are roughly the same size as the cranberries. Grate the zest of the lemon

Cream the butter and sugar in the mixing bowl, add eggs, and mix well, then add dried fruit and lemon zest, add mashed bananas & flour. Place in a 2lb loaf tin and bake for 55 mins.
