crispy duck pancakes

we ate our 1st indian runner drake today and it tasted the best eva!
we made proper crispy duck pancakes - chinese style and one drake was enough for 6 portions.
delicious  :yum: :yum: :yum:

Mmmm I love cricpy duck pancakes.  Will definitely need to get ducks when I eventually move

Sounds delicious. We have 3 surplus Khaki Campbells which need to go. However, sons ducks but son does like crispy duck pancakes so maybe this will encourage him to get cooking  :D

we cheated an bought sharwoods hoisin & spring onion sauce.
wasnt really a recipe, just putting things together...
roasted the whole seasoned duck for 1.5hr, the cut up all meat into shreds and kept in warm oven to crispen up a bit,....smeared warm tortilla wraps with hoisin sauce, shredded (lengthways) of cucumber and spring onions, good layer of duck shreds and roll up....very easy, plus everyone makes their own, so its fun too.
1 drake served 6 pancakes.....sooo delicious
we only killed him cos he wasnt randy and wouldnt mate his ducks...so be warned all fellas....lol
