Title: Milk processing area - help wanted

If you read our blog posts, you'll know we recently started milking our three Shetland cows. Dan is starting to make cheese. Just for us atm.

However, we're thinking about converting part of a stone built outbuilding into a milk / cheese processing area. The total available area is 9.3m x 4.9m but we'd like to use 3.2m x 4.9m for this. There's mains water and electric and we can (fairly) easily connect to our septic tank system. Anyone done similar and able to offer any thoughts, hints, tips - like what to put on the walls for example - or what not to do.

Not much help from me,  sorry! But I'm interested in doing something similar. Have you thought of wetwall for the walls? Would environmental health give you some pointers - you would have to contact them if you ever considered selling your products.
