Hi all, we've just taken up the remaining beet roots. We've picked some, I've juiced loads over the summer, but as it's too cold now for those nice juices, I'm wondering what else can I do?

Well have you made beetroot soup with the addition of a little cardamon?? Just gives it an interesting twist. :thinking:

They'll store fine in sand over the winter - just watch for rodents.
Beetroot crisps are great.
Roasted beetroot along with roast carrots, parsnips, butternut squash and tatties for sunday diners are good.
Beetroot cake.

Cook them in the oven , then peel and slice. While they are cooking fry some onion and garlic very gently in olive oil, then add some anchovy fillets. Muddle it about a bit so the anchovy completely disintegrates and add a splash of balsamic vinegar and pour over the warm beetroot

Didn't know they stored in sand, so that's good to know.
