Title: Lazy cook

I like tasty and low prep time stuff 'cos I'm lazy. I often just chuck lots of good stuff into a casserole dish and throw it into an oven.. the longer the better. If it's stewing steak then a can of royal game soup makes a lazy base and anything else handy including parsnips, carrots, radishes, calabrese, cauliflower, psb.. you get the drift.

However tonights dinner came out rather nice so i thought I'd share:

Fry off some onion, a few sliced mushrooms and sweet pepper and 1 finely chopped jalapeno per portion (a nice heat without being at the burning your mouth stage.. macho folk can add more, wimps can halve it). Then chuck in some quartered tomatoes and when going soft and juicy throw in the chicken pieces, some carrot and cauliflower and enough chicken stock to cover. Simmer away and when it's done finish with a simple flower and water roux to thicken slightly. I served mine with rice. Since this is lazy cooking I always cook enough for another day or the freezer.

I use my slow cooker for similar dishes - 'all in  together fine sunny weather'  :roflanim:

I love onion + mushrooms and jalapeno's, your recipe sounds delishious :)
