Title: Raspberry and Almond Muffins

Oven to 180; muffin tin with cases; I got 14 out of this but the recipe says 8. I must make mean portions.

250g SR flour
150g white sugar
110g lightly toasted flaked almonds, and a few more to top the muffins
Mix the three ingredients in a bowl

Warm 150ml of millk in a pan with 115g butter, until the butter is melted and the milk warm
Add this to the dry ingredients

Add two beaten eggs and mix well

Stir in 375g of frozen raspberries

Sprinkle with toasted almonds

Spoon in to muffin cases and bake for about 25-30 minutes

That sounds lovely apart from the almonds. They have this annoying habit of affecting my ability to breathe. Could anyone suggest something I could replace them with to gain a similar effect? I'm fine with most nuts .. really just almonds and on a lesser scale, peanuts (which I know are peas and not nuts..).

Rosemary, I prefer smaller muffins as long as I get to eat more of them, so your quantity sounds about right to me  ;D

 what about pine nuts? Any left and you can put them on a salad.

 Also I found that because of the fruit these buns went mouldy pretty quickly.

You manage to keep such wonderfully delicious food around long enough to discover this?  ::)
