Title: Courgette pie

I found this recipe in Farmhouse Fare yesterday and tried it last night, it was delicious so I thought to share it with you.
 225g. shortcrust or olive oil pastry.
 450g. courgettes, grated
 1 large onion, finely chopped
 100g. cheese, grated
 1 egg, beaten(I added some double cream to mine :yum: )
 
 Line a 20cm. pie plate with pastry,flll well with courgettes, onion, cheese and pour over, carefully the egg and cream. Put a pastry lid on and cook in a mod. hot oven (200c, 400f, or gas mark 6) for about 30-40 minutes until golden brown.
I served mine with new spuds and a green salad.

Mmmm - sounds delicious. great combination. My husband claims he does'nt like courgettes but I know he'll love this.
