Title: Meadowsweet

Meadowsweet is now in flower for a short time so I thought I would share these recipes with you.
 Meadowsweet Liqueur.
 2 pints meadowsweet flowers, snip them from the stems and press down LOOSELY in a 2 pint jug. Put them in a large Kilner jar.
 Put a whiskey glassful of brandy in a small saucepan with 5 tablespoons of sugar and heat very gently (don't let it get too hot) until sugar has dissolved.
Cool slightly and pour over flowers, then fill kilner jar with brandy. Cheap stuff will do!
Fasten jar(tip...don't buy the cheap Kilner lookalike jars from the supermarket, they will leak!! Better to use a big screw top jar) Give it a good shake and put somewhere dark and cool for about eight weeks.
Strain carefully through double muslin into a jug, have a good old taste as long as you're not driving and pour into the empty brandy bottle.
Keep 'til Christmas ::)  Oh!! be careful to not forget to strain off the flowers after a couple of months or it will taste foul instead of lovely :yum: :yum:
