Title: Reverse Chicken

Here is a lovely dish for you to try.
Reverse Chicken - serve with Sunday Roast veg and good gravy.
You will need one chicken breast per person (preferably your own backyard runner)
One rasher of bacon per breast.
Stuffing mix
One garlic clove per breast
One beaten egg.

You are aiming to make a parcel of each breast, make a slit and stuff in the garlic, wrap the bacon around the meat.
When you have the required number of chooks in blankets put them in a roasting dish and cover them with stuffing mix. Shape the mix to help you see the portions. Last of all coat the stuffing mix with the beaten egg.

Cook with your spuds. The stuffing mix makes a carapace and holds in all the flavor.
I am particularly proud of this little recipe. Last Christmas I made a stuffing mix carapace for my turkey breast while the whole bird cooked. It was succulent and delicious too!
