:o :o I am in sanely jealous!! :D
We have an outhouse we wanted to turn into a butchery but we ran out of storage space too fast! We're still lugging deer carcasses through the house and butchering on my dining room table! ::)

Really lucky that my husband was able to do all the building work.....and now does the butchery. He does a great job, and I'm the one who is in charge of sausages and bacon :)

How receptive were your local council & environmental health guys ? Was it a struggle or were they okay ? and is the big walk in chiller a requirement or do you just prefer it to standard freezers/fridges ?
Sorry for all the questioning :-[ I'm hoping to do something along the same lines eventually, so just wanting the low-down before I contact the 'official ones' who must be obayed ::) ;) ;D

Not a problem with the questions Karen.
The local council and environmental health have been really good. We invited them around before we started to talk through what we planned and they suggested a few things. They have been very helpful right from the start.
I would say it is well worth contacting them before you do anything.
I'm not sure you would be able to cope with just standard fridges if you are cutting whole pigs. You would need somewhere to hang the carcasses when you bring them back from the abattoir.
I have 3 standard freezers in another part of the building which I use to store pork and lamb.

I'm hoping/expecting that the abbatoir (which is linked to a butchers) will hang the carcase's and chop them into halves or quarters for me to take home - but since hubby has seen your walk in chiller, he now wants one ::)
Might be a good idea - I could lock him or the kids in it to chill them out ;) ;D

happy you know my sense of humour well we did toy with the MARY ANN MEAT CO before creating MAKIN BACON (LEE MARVIN IN PRIME CUT) :o :wave:
