Title: Offal freshness
Post by: Steel on August 30, 2019, 05:26:56 pm
Picked up our three sheep from the abattoir today and the liver, kidneys and hearts are in there. Are they still fresh enough to eat if they were slaughtered 10 days ago?

I’ve always had to fetch the offal the next day, or it’s been frozen.  So no I don’t think I would want to eat it if it’s been stood for 10 days.

10 days seems a long time between slaughter and collection? Is that the norm for that abattoir? Rather depends on the how it has been "stood". Some chiller facilities are better than others. Some have an air circulation system that delays meat going "sticky". I would have thought you could tell from the feel, look and smell.
